Today I’m gonna jump on bandwagon of the trending throwback Thursday and flashback to all of the weddings I’ve had then honor of being a part of – mostly in part because I’m going to a wedding this weekend and am very excited about it!

Aren’t weddings just so much fun? I had a blast at mine about 6 months ago – I honestly wish I could do the whole thing all over again (with the same person of course)! Oddly enough, the planning part was the most fun for me – likely because I have an uber-creative mom who literally used my Pinterest board to create my dream wedding and help me achieve my goal of doing my own dessert table. (You can see pictures here) She’s the best!

As fun and exciting as weddings are, the week of/weekend after can be really hectic and tiring. And planning food for everyone to eat on their own busy schedule can be challenging. So in honor of weddings and all that comes with them, I’m going to share my favorite, make-ahead soup recipe with you.
I’ve made Italian Wedding soup for my family and my clients on many occasions – it’s always a highly requested favorite! This version is particularly good because it’s chock-full of veggies and hearty meatballs, which makes for a beautiful presentation and satisfying meal.

So if you have a wedding coming up or just a really hectic week/weekend, I suggest you give yourself a meal to look forward to and make this delicious and lovely soup ahead of time. It’s all about planning, right?
