    Lazy Girl's Single-Serving Cheesecake

    This easy, no-bake single serving cheesecake is the lazy girl's solution to a sweet tooth on a hot summer day!

    Every now and then {more like every day...but I’m trying to sound healthy} I get a really bad case of the sweet tooth. This situation is quite the dilemna because 1. I’m trying to maintain a "summer bod" and 2. I’m too lazy to put any effort into baking something. BUT....I'm happy to tell you I've found a solution to my problems. Enter in this no-bake cheesecake made with Greek yogurt cream cheese {GYCC}, a healthy granola crust, and naturally sweetened with honey.

    This single-serving, no-bake cheesecake is super easy to make and will satisfy an craving for a cold treat on hot summer days without the guilt!

    I'm having a summer fling with GYCC because it's ½ the fat of regular cream cheese but still tastes rich and creamy. It's the perfect cold treat for these hot summer days and I can enjoy it without guilt....when I eat a proper portion, of course! It satisfies my sweet tooth and I feel good about eating it - what more could a lazy girl like me want?

    Lazy Girl’s Single-Serving Cheesecake

    This easy, no-bake cheesecake is made with all natural ingredients and does not require any baking! It will come together in minutes and can be topped with your favorite fresh summer fruits.

    Servings: 1 serving

    Ingredients

    • About ½ cup of granola I use Nature’s Path Organic Coconut Chia Granola, plus extra for serving
    • 2 tablespoons of melted butter or coconut oil
    • 3 to 4 ounces of Greek yogurt cream cheese softened on the counter for 15 minutes or so
    • 1-2 tablespoons of honey you can add more to taste, plus extra for serving
    • Splash of vanilla extract
    • ½ cup blueberries or any other desired fruit

    Instructions

    • Blend the granola in a high-powered blender or food processor until fine crumbs form. Then drizzle the coconut oil or butter and blend until combined.
    • Transfer the mixture into the single-serving dish (such as a ramekin) and press evenly into the bottom, and slightly up the sides. Place in the freezer for 10 minutes while you make the filling.
    • In a small bowl, mix the cream cheese, honey, and vanilla until smooth (I found that using a fork works best).
    • Remove the crust from freezer and spoon the filling into it.
    • Top with blueberries, honey, and granola (optional). You can enjoy this right away, or be like me and put it back in the freezer/fridge to let it set a little more while you do the dishes...oh wait, this cheesecake is for lazy girls so leave the dishes for later!
