    Lightened-Up Curried Chicken Salad

    The curried chicken salad sandwich is a unique change to the classic chicken salad sandwich by adding a few Indian spices.

    Ciao from Florence! Well, not really.....I am in Florence, but have to admit that I wrote/scheduled this post before we left! For those of you who may not know, Ryan and I are currently on a 10-day, food-focused trip to Italy! We celebrated our 2nd wedding anniversary in Rome on May 4th, and will celebrate Ryan's 36th birthday and my 29th while we are here. I can't wait to post pics and relive all the details with you when I get back!

    A Curried Chicken Salad Sandwich.

    In the meantime, I though a good, lightened-up, but still utterly delicious chicken salad recipe was in order. It's springtime, Mother's Day is on Sunday, and I'm thinking a picnic should be in your near future. Breezy, warm, spring days + Mother's Day are both perfect occasions to pack a picnic and enjoy the great outdoors! Chicken salad is perfect to pack for a picnic, along with pimento cheese and pb & j's for kiddos. I'm thinking of packing big Mason jars of chicken salad and pimento cheese for my picnics, with croissants and/or a crusty baguette to spread them on. Add some big wedges of watermelon, a pitcher of freshly-squeezed lemonade, and fresh-from-the oven chocolate chips cookies and you've got it made.

    Please tell me you'll whisk mom away for a lovely picnic or make her breakfast in bed on her special day. If for some reason you can't spend Mother's Day with your mom, do and/or say something nice to a mom you know who's working hard and needs encouragement. A word of encouragement, a card, or some flowers will go such a long way in telling any mom she's appreciated and loved.     Curried Chicken Salad

    Lightened-Up Curried Chicken Salad

    This chicken salad is a lightened-up version of a comfort classic with the addition of Middle-Eastern inspired ingredients of curry powder, dried cranberries and nuts. It makes for a delicious lunch or snack, and is perfect to serve at a shower or luncheon.

    Servings: 8 servings

    Ingredients

    • 4 ounces reduced fat cream cheese softened
    • ½ cup plain low-fat Greek yogurt
    • One 8-ounce can crushed pineapple {canned in juice or water) drained thoroughly
    • 1 teaspoon curry powder
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 3 cups shredded cooked chicken breast
    • ¾ cup dried cranberries
    • ½ cup slivered almonds

    Instructions

    • In a medium bowl, whisk together the cream cheese, yogurt, pineapple, curry powder, salt and pepper until well combined.
    • Fold in the chicken, cranberries, and almonds into the wet mixture until all the dry ingredients are well-coated. Cover and chill for 3-4 hours before serving. Chicken salad will keep in your fridge for up to 4 days.
    • Serve on a bed of lettuce or as a sandwich on whole grain bread or stuffed into a whole wheat pita.
