These beauties. They are the star of the show today. My favorite simple granola recipe; tweaked a bit so I could bake them into the perfect shell for your favorite yogurt and fruit combo. These cups are soft on the inside, crisp on the outside, fragrant, and have a honey-kissed nutty flavor. I'm swooning.
I'm thinking kiddos will love these - serve them at a breakfast bar and let them fill the cups with their favorite yogurt flavors and fruit toppings. Having a wedding or baby shower buffet? No problem. Try baking them in a mini muffin tin for the perfect bite of crunch and cream.
Oh the drama they will bring to your table! Bake them up to a day ahead, store in an airtight container at room temperature, and then fill em' up to your hearts desire when ready to eat. I'm anxious to try filling them with frozen yogurt at well....maybe Chai flavored....mmmmm.

Toasted Granola Cups with Yogurt and Fruit {Gluten Free}
Ingredients
- ½ cup honey
- ¼ cup coconut oil melted and cooled
- 1 egg
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- Pinch of salt
- 2 cups old fashioned oats gluten-free if needed
- 1 cup shredded coconut
- Your favorite flavor of Greek yogurt I chose vanilla
- Fruit for topping
Instructions
- Preheat the oven to 325. Grease a 12 cup muffin tin with cooking spray. Set aside.
- In a medium bow, combine the honey, egg, vanilla, cinnamon, and salt with a whisk. While whisking, slowly add the coconut oil until combined. Stir in the oats and coconut.
- Divide the granola mixture into the muffin cups (you should have enough for 12 cups)/
- Spray a table/cereal spoon with cooking spray. Use the back of the spoon to push the granola mixture down and up the sides to fit the shape of the cup. Spray again as needed to keep the granola from sticking to the spoon.
- Bake the cups in the center rack of your oven for 20-30 minutes until they are golden brown (time can vary with different ovens). Remove rack and let cool for 10-15 minutes before carefully removing with the tip of a pairing knife. Cool completely on a wire rack.
- Fill the cups with ⅓ cup of yogurt and top with fruit.
- Cups will keep in an airtight container at room temperature for up to 1 week.

Granola shell is SO FUN! I've never tried making them... I feel like shells + me would be a fail.

You could totally do this Cassie - it's very similar to making Rice Krispy Treats - you just have your wet granola mix and mold it into the cups. They will not stick at all if your pan is greased. Try it! 🙂
