Spiralized Cucumber Sunomono Salad

This refreshing spiralized cucumber sunomono salad can be ready in under 5 minutes and is the perfect, EASY side dish to serve with fish or other grilled meats.
Servings: 3 -4 cups of salad
Ingredients
  • 2 English cucumbers
  • 1 teaspoon coarse ground kosher salt
  • 3 tablespoons seasoned rice vinegar
  • ¼ teaspoon reduced sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon granulated sugar honey, or agave
  • 2 teaspoons toasted sesame seeds
Instructions
  1. Cut the ends off of the cucumbers and spiralize them according to the manufacturer’s instructions on your spiralizer. You can alternatively slice the cucumbers into thin rounds if you do not have a spiralizer. Place the cut cucumber into a bowl and sprinkle with kosher salt. Toss to combine. Let the cucumber sit for 10 minutes.
  2. Remove the cucumber from the bowl and drain any excess water. Gently dab the cucumber with paper towels to remove extra water. Transfer the cucumber to a serving bowl.
  3. Combine the rice vinegar, soy sauce, sesame oil, and sugar in a small bowl by whisking lightly.
  4. Pour the rice vinegar mixture over the cucumber and toss to coat. Sprinkle with sesame seeds and toss again. Serve immediately.
