1cupwhite whole wheat flour
1 ½teaspoonsbaking powder
1teaspoonbaking soda
½teaspoonfine Kosher salt
1tablespooninstant espresso powdercan also use instant coffee granules
3tablespoonsnatural cocoa powder
1 ½cupsold-fashioned rolled oats
½cup1% milk
One 5.3-oz container fat-free or reduced-fat plain Greek yogurt
¼cupunsweetened applesauce
1tablespoonneutral-flavored oilrecommend walnut, safflower, grapeseed, or canola
3egg whitesor 2 large eggs
¾cuppure organic cane sugar
¾cupsemi-sweet or dark chocolate mini chips
Instructions
Preheat oven to 325. Line a mini muffin tin with paper liners.
In a small bowl, combine the oats, milk, and yogurt. Set aside to let the oats soak while you assemble the remaining ingredients; about 5-10 minutes.
Combine the flour, baking powder, baking soda, salt, espresso, and cocoa powder in a large bowl. Mix thoroughly with a whisk until well-combined. Set aside.
In a separate bowl, combine the applesauce, oil, egg whites, and sugar with a whisk until incorporated.
Add the wet ingredients and the oat mixture to the dry ingredients. Stir with a rubber spatula until just combined. Do not overmix. Fold in ½ cup of the chocolate chips.
With a cookie dough scoop, fill the muffin tin and dot the tops of batter with 2-3 mini chips from the remaining chocolate chips.
Bake for 12 minutes; muffins may look slightly underdone. Place muffin tin on a wire rack and let cool for 10 minutes before removing muffins from pan to cool completely on the wire rack.
Store in an airtight container in the refrigerator for up to 1 week. Reheat for 12-15 seconds in the microwave, if desired. Serve with 2 ounces of milk for dunking or with ¼ cup Greek yogurt for breakfast!
