This easy, 5 ingredient Tomato, Peach and Farro Salad comes together in no time and makes a filling meatless meal or a colorful side dish. It tastes even better the next day and makes for a great lunch on-the-go.
1cupfarrocooked according to package directions and drained
1cupsliced tomatoesI used a variety of grape and cherry tomatoes
1cupdiced fresh peachabout 1 large or 2 medium peaches
¼cuparugula pesto
Optional: 2 ounces crumbled feta or goat cheese
Instructions
In a medium bowl, combine the farro, sliced tomato and peaches, and arugula pesto. Toss to combine. Top with crumbled goat or feta cheese and serve cold or at room temperature.
