Ingredients
For the peanut sauce:
1small clove of garlic or ½ teaspoon bottled minced garlic
½inchsquare piece of ginger or 1 teaspoon bottled minced ginger
¼cupcreamy peanut butter
2teaspoonshoney
1tablespoonreduced sodium soy sauce
2teaspoonshoisin sauce
1tablespoonseasoned rice vinegar
2teaspoonssriracha sauce
2teaspoonsdark sesame oil
2tablespoonswater
For the noodle salad:
⅓package100 grams soba noodles, cooked according to package directions, rinsed under cold water, and drained
2cupsbroccoli slaw
½cupfrozen shelled edemamethawed
½cupdiced fresh mango
¼cupdry roasted peanutscoarsely chopped
¼cupfresh basilroughly chopped
¼cupfresh mintroughly chopped
Instructions
For the peanut sauce:
Combine all ingredients for the sauce in a food processor or blender and blend until smooth. If not using immediately in the salad, store in an airtight container in the fridge for up to one week.
For the noodle salad:
In a large bowl, combine the noodles, broccoli slaw, edemame, and mango with ½ cup of peanut dressing. Toss to combine. Add the peanuts, basil and mint, tossing gently once more just to incorporate. Serve cold within 2 hours or at room temperature.
Notes
If you are making this ahead of time to eat later or use in packed lunches through the week, do not add the fresh mint or basil. Simply toss the noodles and veggie with the sauce, store in the fridge, and then sprinkle the herbs on top when you are ready to eat the salad.
