Ingredients
1poundbonelessskinless chicken breast - cut into ½'' thick strips
1red bell peppercut into thin strips
1mangodiced into 1'' chunks
1packet reduced sodium fajita seasoning {I love this one}
¼cupwater

Instructions
Heat a small amount of oil in a large, nonstick or cast iron skillet. Season the cut chicken strips with a bit of salt and pepper. Place the chicken and bell pepper strips in the skillet and saute over medium heat until the chicken is cooked through, about 6 minutes.
Add the diced mango, fajita seasoning packet, and ¼ cup of water to the skillet. Toss the mixture around to evenly combine.
Bring the mixture to a simmer and cook over low heat for about 6-8 minutes until the sauce thickens.
Heat tortillas according to package instructions. Spoon the fajita mixture into warm tortillas and serve immediately. Refrigerate leftovers for up to 3 days.
