    Sweet and Simple: Fresh Peach Salsa

    If you are looking for fresh peach dish recipes, you must try this Simple and Sweet Peach Salsa! It's ready in 5 minutes and is perfect with fish, chicken, pork, chips, or as a taco, toast, or salad topper!

    Today's post is a warm-up for what I've got in store for you next week. Here's a hint: it's a sheet pan dinner that is an easy summer staple in my kitchen! But before we can get to that, we need to start with the basics. And sometimes, the basics are anything but! Having some "basic" spreads, sauces, spice blends, salsas, and marinades in your recipe arsenal can make cooking in the summertime a really special {and simple!} occasion. Which brings me to my next point...

    My Summer Food Philosophy

    My summertime food philosophy revolves around two words: sweet and simple. For a recipe to fall under the "sweet and simple" category, it's got to meet these very important specs:

    • 10 minutes or less of actual hands-on work.
    • All I need to prep the recipe are a pan, bowl, cutting board and knife.
    • The recipe must involve fruit! Hence, the "sweet" part of the mantra.
    • No stress and little mess.

    That's how we roll here in the summer version of the Sweet Cayenne kitchen. My favorite things about cooking in the summer are that my favorite dishes typically save me lots of time in the kitchen and combine savory with sweet by using fresh fruit in the main dish. I'm obsessed with throwing fresh summer fruit in salsas, salads, on pizza, in paninis, and sauces for grilled/roasted meats. It is such a satisfying combo, and a great way to ensure you use up all the bounty of summer produce!

    If I had to choose a favorite summer fruit to pair with savory recipes, peaches would be the pick for sure!  They are so versatile, are available late into the summer season, and taste great with just about anything. I've developed several peach recipes over the years that I turn back to time and time again. I think you would love any of the following:

    Simple and Sweet Peach Salsa

    Ingredients

    • 1 medium heirloom tomato, diced into ¼’’ pieces, seeds and juice included (about ¾ cup)
    • 1 medium peach, diced into ¼’’ pieces (about ¾ cup)
    • ½ of a large Hass avocado, diced into ¼’’ piece (about ½ cup)
    • 1 ½ teaspoons of finely chopped jalapeño, ribs and seeds excluded
    • 2 tablespoons of fresh lime juice, (about 1 lime)
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 2 tablespoons of fresh basil, finely shredded

    Instructions

    • Lightly toss all ingredients in a bowl to combine, reserving a bit of basil and perhaps a whole leaf or two to garnish the very top of the salsa. Serve immediately. Recipe can easily be halved, doubled, or tripled, etc. to serve any desired amount.

    Notes

    Serving suggestions: as a topper for grilled fish, chicken, or pork, as a dip with chips, salad topper, toast topper, or even as a fruit salad (I’d recommend cutting the produce into larger, 1’’ pieces for this).
